Raw "Bean" Enchiladas

After a brisk walk on the W&OD trail this evening, Melissa and her mother made Raw "Bean" Enchiladas. Bean is in quotes because they don't really have beans in them. The "beans" are mainly a mix of soaked sunflower seeds and miso. The tortillas-- made from corn, flax seed, and bell pepper--will be ready after four to six hours in the dehydrator at 115 degrees.
